Lauki Raita

This is another yummy preparation of the healthy bottle gourd ( lauki) . This is a good coolant and can be served anytime with any meal.
Ingredients
(Serves 4)

Yogurt 250 gms
(about a cup)
- Grated bottle gourd (lauki ) 11/2 cups
- Salt 1 tsp
- Red chilli powder ¼ tsp
- Roasted cumin powder ½ tsp
Method of preparation
- Beat yogurt in a glass bowl.
- Boil the grated bottle gourd (lauki) till it gets tender. Or take a whistle in the pressure cooker. Takes 6-7 minutes.
- After the grated lauki is boiled squeesed the extra water off.
- Now add boiled lauki, Add salt in the yogurt and mix well.
- Garnish with red chilly powder and roasted cumin powder at the time of serving.
Serve with any meal any time.
Some tips
For a different taste, make seasoning for the raita. Heat one tea spoon Ghee, add half a tea spoon of cumin seeds and pour it on top of Lauki ka Raita.
