Lauki Raita

This is another yummy preparation of the healthy bottle gourd ( lauki) . This is a good coolant and can be served anytime with any meal.

Ingredients
(Serves 4)

grated lauki
  • Yogurt  250 gms (about a cup)
  • Grated bottle gourd (lauki ) 11/2 cups  
  • Salt      1 tsp
  • Red chilli powder  ¼ tsp
  • Roasted cumin powder ½ tsp

Method of preparation

  1. Beat yogurt in a glass bowl.
  2. Boil the grated bottle gourd (lauki) till it gets tender. Or take a whistle in the pressure cooker. Takes 6-7 minutes.
  3. After the grated lauki is boiled squeesed the extra water off.
  4. Now add boiled lauki, Add salt in the yogurt and mix well. 
  5. Garnish with red chilly powder and roasted cumin powder at  the time of serving.

Serve with any meal any time.

Some tips

For a different taste, make seasoning for the raita. Heat one tea spoon Ghee, add half a tea spoon of cumin seeds and pour it on top of Lauki ka Raita.
